Description
Amchur powder, also known as mango powder, is made from raw green mangoes that are harvested, dried in the sun and then finely ground.
The powder is used in Indian vegetarian and grain cuisine in a similar way to tamarind. It is generally used in North Indian cuisine in the preparation of spicy dishes such as chana masala, shahi paneer and other dishes. The use of amchur is mainly limited to Indian cuisine, where it is applied as a sour flavouring in curries, chutneys, marinades and as a spice.
The powder gives dishes a delicious flavour and is used as an acidifier in soups, dals and vegetable dishes. Chicken and fish as well as grilled fish on skewers and machli kabab are enhanced in flavour by amchur powder. Amchur powder enhances good taste and is very commonly used in the preparation of potatoes, aubergines and chickpeas. It also improves the flavour of cauliflower, green beans and other vegetables, whether fried or stewed.
It is a very useful ingredient in the preparation of stuffed vegetables, stuffed bread and for sprinkling on fried fish as well as for jal jeera.
