Cooking Steps

  1. Fry Onions and Chicken:
    Fry 2-3 medium onions (thinly sliced) in 1 cup of hot cooking oil until golden. Add 1 kg of chicken (cut into medium portions), 2 tablespoons garlic paste, 2 tablespoons ginger paste, and 25-30 curry leaves. Stir and fry for about 10 minutes until the chicken browns slightly.
  2. Prepare the Curry:
    Add 1 packet of Malay Chicken Biryani Mix (dissolved in ½ cup of water), 1 cup cucumber rings, 6-10 whole green chilies, 1 cup tamarind pulp, and 2 cups water. Bring to a boil, cover, and cook on low heat for 10 minutes.
  3. Boil the Rice:
    In a separate pot, boil 15 cups (3 liters) of water. Stir in 3 tablespoons of salt and 3½ cups of pre-washed and soaked rice. Boil until ¾ of the rice is cooked. Drain the rice completely.
  4. Layer and Cook:
    Spread half the rice in a pot, pour the chicken curry over it, and cover with the remaining rice. Cover the pot and cook on low heat for 5-10 minutes, or until the rice is fully tender. Mix well before serving.
