Cooking Instructions
- Prepare Vegetable Curry:
- Heat ¾ – 1 cup cooking oil and fry 3 finely sliced medium onions until golden brown.
- Add 3 diced medium tomatoes and fry until the oil separates.
- Add 2 tbsp garlic paste, 2 tbsp ginger paste, and 1 ¼ cup (250 g) mixed vegetables (e.g., carrots, peas, potatoes). Fry for 5-10 minutes, adding water as required. Cover and cook on low heat until vegetables are soft.
- Add 6-8 green chilies, increase heat, and stir fry until the oil separates from the gravy.
- Cook the Rice:
- In 15 cups (3 liters) of boiling water, stir in 3 tbsp Shan Salt and 3 ½ cups (750 g) rice (washed and soaked for 20 minutes).
- Boil rice until ¾ cooked. Remove and drain thoroughly.
- Assemble and Cook:
- Spread half of the rice in a pot. Pour the vegetable curry over it.
- Top with the remaining rice, ½ cup chopped fresh coriander, and ½ cup chopped mint leaves.
- Cover and cook on low heat until the rice is tender (about 10 minutes).
- Mix gently before serving.
