Ginger is a flowering plant whose rhizome, ginger root or ginger, is widely used as a spice and a folk medicine. Ginger, sometimes referred to as ginger root, is a rhizome (underground stem/root) that is used for culinary and medicinal purposes. Raw, it has a sharp pungency that dissipates with cooking, but its normal sweetness will quickly turn to bitter if burnt. Ginger is available whole (either in the gnarled multi-stemmed form called a ‘hand’ or as individual pieces called ‘thumbs’), powdered or ground, and can be candied. A natural diuretic, ginger is in the same family as turmeric, cardamom and galangal.
