Easy Steps for Lahori Chargha (Steamed & Deep-Fried Chicken)
- Prepare the Chicken:
Take 2 skinless chickens (each weighing about 750g), make 5-6 deep slits on the breast and leg thighs. - Marination:
Mix 1 tablespoon (20g) of ginger paste, 8 tablespoons (juice from 4 lemons), and Laziza Lahori Chargha Spice Mix (one bag). Apply the mixture evenly over the chickens and leave to marinate overnight in the refrigerator, or for 2-4 hours. - Steaming:
Steam the chicken in a steamer until tender. If you don’t have a steamer, you can create one by placing a sieve or steel plate upside down in a deep pot. Pour one cup of water, place the chickens on the plate/sieve, cover, and cook on low heat for 20-30 minutes or until fully tender. - Frying:
Heat 1 liter (5 cups) of oil in a deep wok/karahi. Fry each chicken until crisp and golden from all sides.
