- Fry the Onions
- Thinly slice 2-3 medium-sized onions and fry them in hot oil until golden brown.
- Spread the fried onions on paper towels to drain excess oil. Reserve the remaining oil and crush the onions once they cool down.
- Prepare the Marinade
- Combine 1 pack of National Bihari Kabab Recipe Mix, crushed fried onions, ½ cup (100g) mustard oil, 1½ tablespoons ginger and garlic paste, ¼ cup (50g) beaten yogurt, 1 tablespoon lemon juice, and raw papaya paste (¾ cup for beef/mutton or 1 tablespoon for chicken).
- Add 750g boneless meat strips (1-inch wide, 6-8 inches long).
- Mix well and let it marinate for 3-4 hours for beef/mutton or 1 hour for chicken.
- Cooking Options
- Barbeque: Thread the meat strips onto skewers and grill over a low charcoal/gas flame. Once golden brown, baste with oil and continue grilling evenly on all sides until tender and cooked through.
- Pan Frying Alternative: Roll the marinated meat into small rolls and cook in a greased pan over low heat until tender. Once the water has evaporated, place a piece of burning charcoal in the pan, pour 1 tablespoon of oil over it, cover for 5 minutes to infuse the smokey flavor, then remove the charcoal.
- Serve
- Serve hot with paratha, chapati, salad, and raita for a complete meal.
