Cooking Instructions
For Stir-Fried Liver
- Marinate 500-750g of liver cubes (chicken/mutton/beef) with:
- 1½ tbsp. crushed ginger
- 2 tbsp. (50g) crushed garlic
- 1 packet Shan Liver Masala
- Let it rest for 15-20 minutes.
- Heat ½ cup (75g) of ghee/oil/butter, and fry the liver cubes on low heat until well cooked and tender (about 10-15 minutes), stirring continuously.
- Garnish with green coriander and lime juice.
- Serve with hard crust buns, double roti, or naans.
For Liver Curry
- Fry 2 medium finely sliced onions in 1 cup (175ml) hot ghee/oil until golden.
- Add 2 tbsp. (50g) crushed garlic, 1 cup whipped yogurt or 200g chopped tomatoes, and 1 packet Shan Liver Masala. Fry for 5 minutes.
- Add 500-750g small liver cubes and fry for a few minutes.
- Add 1-2 cups of water, reduce heat, and cover. Cook until the liver is tender.
