Cooking Instructions

For Stir-Fried Liver

  1. Marinate 500-750g of liver cubes (chicken/mutton/beef) with:
    • 1½ tbsp. crushed ginger
    • 2 tbsp. (50g) crushed garlic
    • 1 packet Shan Liver Masala
    • Let it rest for 15-20 minutes.
  2. Heat ½ cup (75g) of ghee/oil/butter, and fry the liver cubes on low heat until well cooked and tender (about 10-15 minutes), stirring continuously.
  3. Garnish with green coriander and lime juice.
  4. Serve with hard crust buns, double roti, or naans.

For Liver Curry

  1. Fry 2 medium finely sliced onions in 1 cup (175ml) hot ghee/oil until golden.
  2. Add 2 tbsp. (50g) crushed garlic, 1 cup whipped yogurt or 200g chopped tomatoes, and 1 packet Shan Liver Masala. Fry for 5 minutes.
  3. Add 500-750g small liver cubes and fry for a few minutes.
  4. Add 1-2 cups of water, reduce heat, and cover. Cook until the liver is tender.
